Chicken Burrito bowl

Tip: Do not add chipotle sauce in your meal prep container. You can put your sauce in a small container then add it in when you’re ready to eat.

Indgredients

  • Shredded/ diced/ ground Chicken Breast500g
  • Drained Black Beans300g
  • Sweet corn1/2 cup
  • Plain Greek Yoghurt100g
  • Chipotle in Adobo sauce2 tbsp
  • Avocado mashed (optional)1
  • Garlic1 clove
  • Lime juice2 tbsp
  • Brown Rice 1 cup
  • Olive Oil1 tbsp
  • Chopped Cilantro Leaves2 tbsp
  • Roma Tomatoes2
  • Diced onion1/4 cup
  • Chopped lettuce1 cup

Directions

Season your diced chicken breast or ground chicken to taste. In a large pan, fry your chicken until brown.

Cook your rice as per package instructions.

To make your pico de gallo, Combine your chopped onion, roma tomatoes and fresh cilantro leaves in a bowl. Add 1 tbsp of lime juice.

to make your chipotle sauce; in a small bowl, add your greek yoghurt , chipotle in adobe sauce, 1 tsp of lime juice and mix together until smooth consistency.

Divide your rice and chicken into meal prep containers and top with black beans, corn, lettuce pico de gallo and drizzle with chipotle cream sauce.

Optional: You can also add some mashed avocado

Serve cold or if you like it warm, heat up the rice and chicken separately.
