Coconut Prawn Pasta

Indgredients

  • Peeled Prawns400g
  • Protein/wholemeal spaghetti 270g (uncooked)
  • Light coconut cream100ml
  • Kale leaf and spinach300g
  • Olive oil1 tbsp
  • Onions small1 piece
  • Tomatoe Paste2 tbsp

Directions

Add the pasta to a pot of boiling water and cook until slightly soft but not well cooked.

To a frying pan over medium heat, lightly fry the prawns until cooked then set aside

Drain the spaghetti reserve about 40mls of pasta water.

Fry chopped onions and add the tomato paste.

Then add the prawns, pasta, coconut oil, pasta water and kale/spinach. Let it simmer for about 3-4minutes the serve and enjoy.
