Steak Bites

Indgredients

  • Lean steak450g
  • Coriander 2 tbsp
  • Garlic2 cloves
  • Green onions x4
  • Sweet potato Large520g (raw)
  • Olive oil3 tbsp
  • Coconut Aminos2 tbsp
  • Diced Bell pepper(red, orange and green)3

Directions

Pat dry your steak with a paper towel or clean kitchen towel and dice them into cubes. Then marinate with salt, pepper and any seasoning you like.

Dice your sweet potatoes, sprinkle with salt and cinnamon (optional) and pre-cook them in the microwave for 4-6 min, they are ready when you can insert a fork into a piece with a little resistance. Try not overcook them otherwise you’ll end up with mashed sweet potatoes!

Heat up your pan over high heat. Add x2tbsp of oil until shimmering. pour steak and cook for 10 minutes, flipping the sides every two minutes then set aside onto a plate.

Add one more tbsp of oil to the same pan on medium low, add the sweet potatoes and cook until brown whilst stirring occasionally.(4min).

Add garlic to the pan and sautee for 1 min, then add your bell peppers. Cook for 3-4 min.

Add steak with 2tbsp of coconut aminos and cook for an additional 1-2 minutes until the liquid has evaporated.

Add black pepper and cilantro, toss and remove from the heat. Bon apetito
